Copycat Recipes: Red Lobster Cheese Biscuits
Ingredients
2 cups buttermilk baking mix (see note)
2/3 cup milk
1/2 cup shredded Cheddar cheese
1/4 cup butter or margarine, melted
1/2 tsp. garlic powder
Instructions
Heat oven to 450 degrees. Combine baking mix, milk and cheese with a wooden spoon until soft dough forms. Beat vigorously for 30 seconds.
Drop dough by heaping tablespoons onto an un-greased cookie sheet. Bake until golden, 8 to 10 minutes. Combine melted butter and garlic powder; brush over warm biscuits before removing from cookie sheet.
Makes 10 to 12 biscuits.
Note: Bisquick is probably the best-known brand of buttermilk baking mix. Following is a recipe for an inexpensive homemade version:
Homemade Baking Mix
10 1/2 cups flour
1/4 cup baking powder
1 1/2 T. salt
1/2 cup sugar
2 cups shortening
1 cup buttermilk powder
1 1/2 tsp. baking soda
In a large bowl, mix all ingredients with an electric mixer until particles are small and uniform in size.
Store on a shelf in a tightly covered container. Storage life is about 3 months. Makes 13 cups.
